Grown on a 200-year-old estate in Baena, Andalucia in Spain, there are three different varieties of olive that are blended to create the Núñez de Prado organic olive oil. Forgoing filtering, the process is minimal to retain the flavour, the first step is to grind them to a paste which is then layered between mats and squeezed – simple.
The result is a combination of spicy and fruit aromas married with fresh citrus that transitions to a peppery finish.
