The olives are first stone ground in the De Carlo mill and the freshly crushed organically grown garlic cloves are immersed for some days in the extra virgin olive oil. The oil is then filtered through fine muslin and bottled.
Since it’s infused flavours are softer than those of raw garlic, this oil makes an excellent and mellow addition to delicate dishes or raw food; it can also be used in sauces or for cooking to give a touch of liveliness.
